Why 125 grams is not a single number of cups

Cups measure the space an ingredient takes up. Grams measure how much matter is in it. The bridge between them is density, and density changes with every ingredient — which is why 125g of all-purpose flour comes to 1 cups while the same 125g of butter is only 0.55 cups.

The spread on this page is wide. 125g fills 1.47 cups of cocoa powder at one end and 0.37 cups of honey at the other. Using the wrong one is the difference between a cake that rises and a cake that does not, which is exactly why recipes written outside the US give weights in the first place.

How to convert 125 grams to cups yourself

Divide the weight by what one cup of that ingredient weighs:

cups = 125 ÷ grams per cup

For all-purpose flour, one cup is 125g, so 125 ÷ 125 = 1 cups. For granulated sugar at 200g per cup, 125 ÷ 200 = 0.62 cups. Going back the other way, multiply instead of dividing.

One caveat worth knowing: the grams-per-cup figures above assume flour is spooned into the cup and levelled, not scooped and packed. Scooping straight from the bag compresses it and can add 20–25% more weight, so a scooped cup of flour is closer to 150g than 125g. If your results keep coming out heavy, that is usually why. Brown sugar is the opposite convention — it is measured packed, which is already reflected in its figure.
