    Stir the baking soda into the hot water in a bowl until dissolved. Dunk the bites in batches for 30 seconds, scoop out with a slotted spoon and drain on a rack.

    Sprinkle the wet bites with flaky salt.

    Preheat to 190°C / 375°F. Line the basket with a piece of pierced baking paper, lay the bites in with gaps, and air fry in batches for 7 to 8 minutes until deep mahogany.
