Crispy Sesame Chickpeas
A crunchy, sticky-sweet snack from one tin of chickpeas.
One tin of chickpeas turns into a moreish, crunchy snack in the air fryer, no deep frying needed. The secret is drying them thoroughly, then glazing only at the end so the soy and honey caramelise without burning. Great on salads and grain bowls too.
👩🍳 Method
-
1
Dry the chickpeas as well as you can with a clean towel. Any surface water stops them going crunchy. Discard loose skins.
-
2
Toss with the olive oil and salt.
-
3
Preheat to 190°C / 375°F. Air fry for 12 to 15 minutes, shaking every 5 minutes, until deep golden and crunchy right through.
-
4
Mix the soy, honey and sesame oil in a bowl. Tip in the hot chickpeas and toss to coat.
-
5
Return them to the basket for a final 2 minutes so the glaze sets and turns sticky, not wet.
-
6
Toss with the sesame seeds and cool for a few minutes. They crisp up further as they sit.

♨️ Air fryer notes
- Cook at 190°C / 375°F and preheat for 2 to 3 minutes for the crispiest result.
- Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
- Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.
💡 Cook's tips
- The drier the chickpeas go in, the crunchier they come out. Give them a good pat.
- Glaze at the end. Adding sugar too early just burns it in the basket.
🔀 Make it your own
- Savoury spin: skip the honey and toss with smoked paprika and garlic powder.
- Add chilli flakes to the glaze for a sweet-heat version.
📦 Storing & reheating
Store loosely covered at room temperature for 2 days. Sealing them airtight while warm makes them go soft. Re-crisp at 190°C for 3 minutes.
❓ Frequently asked
Why are my air fryer chickpeas not crispy?
Usually too much moisture or too little time. Dry them thoroughly before cooking and glaze only at the end, then give a final 2 minute blast.
Do you need to preheat for chickpeas?
A 2 to 3 minute preheat helps them start crisping right away. Shake the basket every 5 minutes for even colour.
