Golden Mozzarella Sticks

Before You Start
The secret to mozzarella sticks that don't burst is the freezer. Freezing the coated sticks solid before they go in keeps the cheese from leaking while the crumb crisps. A double crumb coat gives extra insurance and extra crunch. Serve with warm marinara for dipping.
Instructions

Set up three bowls: flour, beaten eggs, and panko mixed with the garlic powder and herbs.

Coat each cheese stick in flour, then egg, then panko. For a sturdier crust, dip back in egg and panko a second time.

Lay the sticks on a tray and freeze for at least 1 hour, until solid. This is what stops the cheese leaking.

Preheat the air fryer to 200°C / 400°F. Spray the frozen sticks with oil and lay them in a single layer.

Air fry for 6 to 8 minutes, until golden and crisp. Watch closely near the end, since they can start to ooze if overcooked.

Rest for a minute, then serve straight away with warm marinara.
