Before You Start
Poppy seeds bring the texture, but lemon does the actual work here, three ways: zest beaten into the sugar, juice in the batter, and a syrup brushed on while the muffins are hot. The initial blast of high heat is the bakery trick for domed tops, and it works in any muffin recipe you own.

Heat the oven to 220°C / 425°F. Line a 12 hole muffin tin.

Rub the zest of all 3 lemons into the ¾ cup sugar with your fingers until it smells like a lemon grove. This releases the zest oils into the sugar.

Whisk the flour, poppy seeds, baking powder, baking soda and salt into the lemon sugar.

Whisk the eggs, yogurt, oil, vanilla and the juice of 1 lemon in a jug. Fold into the dry mix until just combined, lumps and all.

Divide between the cases, filling them right up. Bake at 220°C for 5 minutes, then drop to 180°C / 350°F without opening the door and bake 13 to 15 more, until a skewer comes out clean.

Simmer the remaining lemon juice with the 3 tablespoons sugar for a minute. Brush over the hot muffins and cool in the tin for 10 minutes.

- The hot start sets the muffin edges while the middle is still rising, forcing the dome. It is the single highest-value trick in muffin baking.
- Batter lumps are protective. A smooth muffin batter is an overmixed one, and overmixed muffins are tough and tunnelled.
