- 18 g finely-ground coffee
- Filtered water at ~93 °C
Method
- Dose and tamp as for espresso.
- Stop the shot early — around 25 g out — for a “restricted” pour.
- The result is sweeter and rounder, with less bitterness.
Barista tip
Grind a touch finer than your espresso so the shorter shot still tastes full.
