How to make a Ristretto

Ingredients

  • 18 g finely-ground coffee
  • Filtered water at ~93 °C

Method

  1. Dose and tamp as for espresso.
  2. Stop the shot early — around 25 g out — for a “restricted” pour.
  3. The result is sweeter and rounder, with less bitterness.
Barista tip

Grind a touch finer than your espresso so the shorter shot still tastes full.
