How to make a Ristretto

  • 18 g finely-ground coffee
  • Filtered water at ~93 °C

Weigh your dose and your water. A gram or two changes the cup, so a coffee scale beats eyeballing every time.

  1. Dose and tamp as for espresso.

  2. Stop the shot early, around 25 g out, for a “restricted” pour.

  3. The result is sweeter and rounder, with less bitterness.
