Before You Start
A hasselback is a baked potato with a hundred edges, and edges are what an air fryer does best. The cuts crisp individually while the base stays fluffy. Two chopsticks either side of the potato are the only technique: they stop the knife going through, every single time.

Sit each potato between two chopsticks or wooden spoon handles. Slice down in 3 mm intervals. The sticks stop the blade so every cut stays connected at the base.

Mix the butter, oil, garlic and salt. Brush the potatoes all over, working a little into the cuts without forcing them.

Preheat the air fryer to 180°C / 350°F. Sit the potatoes cut side up and cook for 20 minutes. The slices begin to fan open as they cook.

Brush again, letting the butter run into the now-open fan, and scatter with the herbs.

Cook another 18 to 20 minutes until the edges of every slice are browned and crisp and a knife slides into the middle with no resistance.

Finish with parmesan and flaky salt while hot.
