Elote Corn Ribs
Corn cobs quartered into ribs that curl up, Mexican street-corn style.
Cut a corn cob into quarters lengthways and something magic happens in the air fryer: the ribs curl and char at the edges. Dressed elote style with lime, chilli and salty cheese, they are the most fun side you can make and they photograph beautifully.

Microwave the whole cobs for 2 minutes first. This softens them so they are much safer and easier to cut.

Stand a cob up and cut it in half lengthways, then cut each half into two, giving four long ribs per cob. Use a heavy knife and go slow.

Toss the ribs with the oil and salt.

Preheat to 200°C / 400°F. Air fry for 10 to 14 minutes, turning once, until the kernels are golden and the ribs curl.

Brush the hot ribs with mayonnaise, then shower with the crumbled cheese, a dusting of chilli and a good squeeze of lime.

Scatter over the coriander and serve straight away with extra lime wedges.

- Cook at 200°C / 400°F and preheat for 2 to 3 minutes for the crispiest result.
- Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
