Blending the oats is what turns this from breakfast into something that tastes like a muffin. The air fryer does it in half the time an oven would, and since it's a single portion, there's no reason to make it the night before.

  1. Blend the oats, milk, maple syrup, egg, baking powder, vanilla and salt until completely smooth, about 30 seconds. Any whole oats left will stay chewy.

    • ½ cup (45 g) rolled oats
    • ⅓ cup (80 g) milk
    • 2 tbsp (40 g) maple syrup
    • ½ tsp baking powder
    • ½ tsp vanilla extract
    • a pinch fine salt
  2. Grease a small ramekin or 10 cm tin well. This batter sticks to anything you haven't oiled.

  3. Pour in the batter, then stir through half the blueberries and scatter the rest over the top with the chocolate chips.

  4. Preheat the air fryer to 175°C / 350°F for 2 minutes, then lower the dish in.

  5. Air fry for 13 to 15 minutes, until risen and firm with a slight give in the middle. If your basket runs hot, check at 11.

  6. Rest for 3 minutes so it pulls away from the dish, then eat straight from the ramekin with yogurt or a splash of cream.

Air fryer notes

  • Cook at 175°C / 350°F and preheat for 2 to 3 minutes for the crispiest result.
  • Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
  • Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.

Cook's tips

  • Frozen blueberries work fine and don't need defrosting, but toss them in a teaspoon of the oats first so they don't sink and go purple.
  • The mixture doubles happily in a slightly wider dish. Add 3 minutes and check with a skewer rather than guessing.

Make it your own

  • Mash half a banana into the batter and swap the blueberries for chocolate chips.
  • Use peanut butter and raspberry, or grated apple with cinnamon, in place of the berries.

Storing & reheating

Best eaten warm. It keeps covered in the fridge for 2 days and reheats at 160°C for 4 minutes, though the texture goes denser.

How many grams is a cup of rolled oats?

About 90 g per US cup, so the ½ cup here is roughly 45 g. Use rolled oats rather than instant, which blends into paste.

Can I make baked oats without a blender?

You can, but use oat flour instead of whole oats and whisk everything by hand. Unblended whole oats give you a texture much closer to flapjack.
