Air Fryer Vegetable Spring Rolls

Before You Start
Crunchy spring rolls without deep frying. A quick stir-fried veg filling wrapped in spring roll pastry crisps up beautifully in the air fryer with just a brush of oil. Serve with sweet chilli or soy dip.

Stir-fry the cabbage, carrot, spring onion and garlic in the sesame oil for 3 to 4 minutes until just wilted. Add the soy and cook off the liquid. Cool.

Lay a wrapper as a diamond, add a line of filling near the bottom corner, fold up, fold in the sides and roll tightly, sealing the edge with a little water.

Preheat the air fryer to 190°C / 375°F. Brush or spray the rolls all over with oil.

Air fry seam side down for 10 to 14 minutes, turning halfway, until golden and crisp.

Serve hot with sweet chilli or soy dipping sauce.
