The air fryer does something a microwave never will, which is crisp the tortilla into a shell that holds together in your hand. Fill them a little less than feels right and roll them tight; an overfilled burrito bursts along the seam every time.

  1. Brown the sausage meat in a pan over medium-high heat, breaking it up, for 6 minutes. Add the diced pepper and cook 3 more minutes, then tip into a bowl.

  2. Beat the eggs with the milk and salt and scramble them softly in the same pan. Pull them off the heat while still slightly wet, since they'll cook again in the basket.

    • ½ tsp fine salt
  3. Lay a tortilla flat. Put a quarter of the egg, sausage, cheese and spring onion in a line just below the centre, leaving 5 cm clear at each side.

  4. Fold the sides in first, then roll up tightly from the bottom, tucking as you go. A tight roll is what stops it unravelling.

  5. Brush all over with olive oil and set seam side down in the basket. Don't stack them; they need space to crisp on every side.

  6. Air fry at 190°C / 375°F for 7 to 9 minutes, turning once at the halfway point, until golden and crisp. Rest 2 minutes before biting in, since the filling is molten.

Air fryer notes

  • Cook at 190°C / 375°F and preheat for 2 to 3 minutes for the crispiest result.
  • Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
  • Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.

Cook's tips

  • Warm the tortillas for 15 seconds in the microwave before rolling. Cold tortillas crack along the fold.
  • Seam side down for the first half isn't optional. It's what seals the burrito shut.

Make it your own

  • Swap sausage for black beans and sweetcorn for a vegetarian version.
  • Add a spoon of salsa inside, but drain it well first or the tortilla goes soggy.

Storing & reheating

Wrap cooled burritos in foil and refrigerate for 3 days or freeze for 2 months. Reheat from frozen at 170°C for 12 to 14 minutes, unwrapped.
