Air Fryer Loaded Nachos

Before You Start

Nachos fail in one way: a cheesy top layer hiding a dry chip mine underneath. The air fryer fixes this because the basket forces small batches, and small batches force layering. Two levels, cheese on both, five minutes. The cold toppings go on after the heat, never before.

Instructions

  1. Line the basket with baking paper or use a small tin that fits inside.

  2. Build layer one: half the chips, half the cheese, half the beans, half the jalapeños.

  3. Build layer two with the rest of the chips, cheese, beans and jalapeños on top.

  4. Air fry at 180°C / 350°F for 4 to 6 minutes, checking at 4, until the cheese is fully melted and bubbling at the edges.

  5. Slide the whole sheet out onto a board or platter.

  6. Now, and only now, the cold things: salsa, sour cream, avocado, spring onion and coriander over the top. Eat immediately, from the outside in.

♨️ Air fryer notes

  • Cook at 180°C / 350°F and preheat for 2 to 3 minutes for the crispiest result.
  • Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
  • Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.

💡 Cook's tips

  • Cheese on every layer or you have built a chip pile with a cheese hat. This is the entire doctrine of nachos.
  • Cold toppings on hot cheese, off the heat. Salsa in the air fryer makes steam, and steam makes soggy nachos.

🔀 Make it your own

  • Add the leftover cajun shrimp, char siu pork or fajita steak from those recipes between the layers.
  • Swap the beans for seasoned beef mince cooked as per the taquitos filling.

📦 Storing & reheating

Nachos have no storage story and never will. Assembled nachos are a now food. Leftover components keep separately for days.
