Before You Start

Meatballs brown better in an air fryer than in most pans, because the heat hits every side at once and nothing sticks or breaks. These lean Korean: garlic and ginger inside, a gochujang and honey glaze outside. Panko soaked in the mix keeps them tender at a size that cooks in ten minutes.

Instructions

  1. 1

Mix the panko and egg in a big bowl and let it sit for 2 minutes to turn to paste. This soaked panko is what keeps the meatballs soft.

  2. 2

Add the beef, two thirds of the spring onion, the garlic, ginger and salt. Mix gently until just combined.

  3. 3

Roll into 16 balls with damp hands, about a heaped tablespoon each.

  4. 4

Preheat the air fryer to 200°C / 400°F for 3 minutes. Air fry the meatballs in a single layer for 8 minutes.

  5. 5

Whisk the gochujang, honey, soy and sesame oil. Brush it over the meatballs and cook 2 to 3 minutes more until sticky and lacquered.

  6. 6

Scatter with sesame seeds and the last of the spring onion. Serve over rice, or spear with picks as a party plate.

♨️ Air fryer notes

  • Cook at 200°C / 400°F and preheat for 2 to 3 minutes for the crispiest result.
  • Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
  • Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.

💡 Cook's tips

  • Damp hands stop the mix sticking to you and give smoother meatballs. Re-wet between every few.
  • Glaze late, as always in an air fryer. Honey and gochujang both scorch given a full ten minutes.

🔀 Make it your own

  • Half beef, half pork mince makes a softer, richer meatball.
  • Tuck them into lettuce cups with rice and extra glaze for wraps.

📦 Storing & reheating

Fridge for 3 days, reheated at 180°C for 4 minutes. They freeze cooked and unglazed for 2 months, then glaze during reheating.

Frequently asked

How long do meatballs take in an air fryer?

Tablespoon-size meatballs take 10 to 12 minutes total at 200°C / 400°F. No turning is needed. Cut one open to check, or look for 71°C / 160°F inside.

What can I use instead of gochujang?

Sriracha mixed with a teaspoon of miso comes close, or use hoisin for a mild, sweeter glaze. Gochujang brings both heat and fermented depth, so it is worth finding.
