Before You Start
Roasting rescues almost any peach, including the disappointing rock-hard supermarket kind: ten minutes of heat concentrates the sugars and softens the flesh into something closer to dessert than fruit. Honey and butter baste them as they go, and crushed amaretti over the top do the crunch work. Ice cream is not optional in spirit.

Stir the melted butter, honey, cinnamon and vanilla together.

Sit the peach halves cut side up and brush them generously with the honey butter, letting it pool in the stone hollows.

Preheat the air fryer to 180°C / 350°F for 3 minutes.

Air fry the peaches cut side up for 10 to 12 minutes, brushing once more at 6 minutes, until soft through and caramelised at the edges.

Scatter the crushed amaretti over for the final 2 minutes so they toast.
