Whisk the soy, oil, honey, garlic, paprika and salt in a bowl. Add the beef cubes and turn to coat. Marinate for 30 minutes at room temperature, or up to 8 hours in the fridge.

If you are using wooden skewers, soak them in water for 20 minutes and check they fit your basket. Snap them shorter if not.

Thread the beef, peppers and onion alternately, leaving a small gap between pieces so hot air can reach every side.

Preheat the air fryer to 200°C / 400°F. Lay the skewers in a single layer, brushing on any leftover marinade.

Air fry for 8 to 12 minutes, turning halfway, until the edges char and the beef is done to your liking. Aim for 55°C / 130°F for medium rare.
