The kind of dinner you assemble rather than cook. The only real technique is giving everything enough room. A crowded tray steams and you end up with pale sausages and limp peppers, so use the biggest tray you own or split it across two.
Everything you need
- 8 good quality sausages
- 3 mixed peppers, thickly sliced
- 2 red onions, cut into wedges
- 250 g cherry tomatoes
- 6 garlic cloves, left whole
- 2 tsp dried oregano
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar

Worth knowing
- Leaving the garlic cloves whole in their skins lets them go sweet and creamy instead of burning.
- The balsamic goes on at the end. Added early it just burns off.
