Ten Minute Chilli Garlic Noodles

The whole thing takes about as long as the noodles need to boil.

This is the recipe for the night when you are not cooking so much as refusing to skip dinner. Everything happens in the serving bowl while the noodles boil. If you have a jar of chilli flakes and some garlic you already have most of it.

  • 100 g dried wheat noodles
  • 3 cloves garlic, finely minced
  • 1 tbsp chilli flakes
  • 1 tbsp light soy sauce
  • 2 tsp black vinegar or rice vinegar
  • 2 tbsp neutral oil
  • 1 spring onion, sliced

  1. Put the noodles on to boil according to the packet.

  2. While they cook, put the garlic, chilli flakes and a pinch of salt in the bowl you plan to eat from.

  3. Heat the oil in the smallest pan you own until it shimmers, then pour it over the garlic and chilli. It should sizzle loudly. Stir once.

  4. Add the soy sauce and vinegar to the bowl and mix.

    • 2 tsp black vinegar or rice vinegar
  5. Drain the noodles, saving a splash of the water. Tip them into the bowl with a tablespoon of that water and toss hard until every strand is coated. Top with spring onion.
