Before You Start

Bone-in thighs are the most forgiving chicken you can put in an air fryer: the fat under the skin bastes the meat while the skin crisps above it. The honey butter goes on in the last five minutes only. Brush it earlier and the honey burns before the skin has rendered.

    Pat the thighs very dry, especially the skin. Dry skin crisps, wet skin steams.

    Season all over with the paprika, garlic powder, salt and pepper, getting some under the skin where you can.

    Preheat the air fryer to 190°C / 375°F for 3 minutes. Lay the thighs in skin side up, not touching.

    Air fry for 18 minutes without turning. The skin needs uninterrupted top heat to render and crisp.

    Stir the melted butter and honey together. Brush it generously over the skin and cook another 5 to 6 minutes until lacquered and deep golden, and the thickest part reads 74°C / 165°F.

    Rest for 5 minutes and spoon any basket juices back over.

  • Cook at 190°C / 375°F and preheat for 2 to 3 minutes for the crispiest result.
  • Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
  • Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.

💡 Cook's tips

  • Skin side up the whole time. Flipping thighs halfway is oven advice, and in an air fryer it just softens the skin you crisped.
  • If the glaze darkens too fast in the corners, it is done. Pull them a minute early rather than chase the timer.

🔀 Make it your own

  • Add a teaspoon of sriracha or gochujang to the honey butter for hot honey thighs.
  • Boneless thighs work at 190°C for 14 to 16 minutes, glazing at 10.

📦 Storing & reheating

Fridge for 3 days. Reheat skin side up at 190°C for 4 to 5 minutes to bring the skin back. Do not microwave unless you are at peace with soft skin.
