Before You Start
Lobster tail is the easiest luxury the air fryer does: butterfly the tail, sit the meat on top of the shell, baste with garlic butter and give it eight minutes. The shell shields the underside while the top bastes. The only way to ruin it is time, so use a thermometer and stop at 60°C.

Cut through the top of each shell with kitchen scissors, from the open end to the tail fan, without cutting the meat.

Prise the shell open, loosen the meat from the sides, and lift it up to sit on top of the split shell, still attached at the tail. This is butterflying, and it looks harder than it is.

Stir the melted butter with the garlic, paprika, lemon juice and salt. Brush the meat generously, keeping some butter back.

Preheat the air fryer to 195°C / 380°F for 3 minutes.

Air fry the tails, meat up, for 6 to 8 minutes depending on size, basting once with the reserved butter at 4 minutes. The meat is done at 60°C / 140°F, opaque and just firm.

Rest 2 minutes, scatter with parsley and serve with lemon wedges and any butter from the basket drawer.

- Cook at 195°C / 380°F and preheat for 2 to 3 minutes for the crispiest result.
- Keep everything in a single layer with space around each piece. Overcrowding steams food instead of crisping it, so cook in batches if your basket is small.
- Shake or turn halfway, and check a few minutes early, since air fryers cook faster than ovens and every model runs slightly differently.
💡 Cook's tips
- Thaw frozen tails overnight in the fridge, never in the microwave. Partially frozen centres are how tails end up both rubbery and raw.
- 60°C / 140°F and out. Lobster carries on cooking as it rests, and the line between succulent and eraser is about 90 seconds.
🔀 Make it your own
- A pinch of cayenne and a teaspoon of honey in the butter for a hot honey tail.
- Grated parmesan over the meat for the last 2 minutes for a gratin finish.
📦 Storing & reheating
Lobster does not do leftovers gracefully. If you must, fridge for 1 day and eat cold in a roll with mayo rather than reheating.
